Ingredients

2 small avocados -
2 medium peaches (diced) -
1/4 cup onion (finely diced) -
1 lemon (juiced) -
2 tablespoons raisins -
1/8 teaspoon cayenne pepper -
1 teaspoon fresh thyme -
to taste salt and pepper (optional)
Directions

Cut the pitted avocados in half; you will need the skin to serve the salad. -
Carefully place the avocado in a medium bowl. Add lemon juice, cayenne pepper, fresh thyme, salt (optional), pepper (optional), and mash until creamy. -
Wash, dry, and dice the peaches and add into avocado mixture along with the raisins and finely diced onion. Stir until evenly combined. -
Divide the salad into 4 servings and spoon into avocado skins.
